Blackeyed Pea Cornbread
Ingredients
- 1 c cornmeal
- ¼ c flour
- ½ t salt
- ½ t baking soda
- 1 egg
- ½ c buttermilk
- ½ c oil
- ½ c chopped onion
- ½ c cream corn
- ½ c cooked blackeyed peas I use canned
- ½ c shredded cheese
Instructions
- Preheat oven to 350°.
- Combine cornmeal, flour, salt, baking soda. Mix in egg, buttermilk, and oil.
- Fold in chopped onion, corn, peas, and cheese.
- Grease a 9 x 13 baking dish and add in mixture.
- Bake for 45 minutes or until a toothpick inserted comes out clean.
