Black-eyed Pea Cornbread cut into squares

Blackeyed Pea Cornbread

Ingredients
  

  • 1 c cornmeal
  • ¼ c flour
  • ½ t salt
  • ½ t baking soda
  • 1 egg
  • ½ c buttermilk
  • ½ c oil
  • ½ c chopped onion
  • ½ c cream corn
  • ½ c cooked blackeyed peas I use canned
  • ½ c shredded cheese

Instructions
 

  • Preheat oven to 350°.
  • Combine cornmeal, flour, salt, baking soda. Mix in egg, buttermilk, and oil.
  • Fold in chopped onion, corn, peas, and cheese.
  • Grease a 9 x 13 baking dish and add in mixture.
  • Bake for 45 minutes or until a toothpick inserted comes out clean.
