Smoked Turkey Enchiladas

Ingredients
  

  • 10 small flour tortillas
  • 2 c turkey cooked, shredded
  • 2 c shredded cheese we used fiesta blend
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 c turkey or chicken broth
  • 1 c sour cream
  • 4 oz diced green chilis
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • ½ tsp Pepper

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9×13 pan using non-stick cooking spray.
  • Mix cooked turkey and 1 cup of cheese together. Roll up in tortillas and place in pan seam side down.
  • In a medium saucepan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick.
  • Place the sour cream in a small bowl: temper it by slowly mixing in ¼ cup of the simmering sauce. Stir the mixture into the sauce in the pan.
  • Add in diced green chilis and seasonings.
  • Pour sauce over enchiladas and add remaining cheese over top.  Bake in preheated oven for 20-25 minutes or until enchiladas are heated through and sauce is bubbly. 
  • Top with cilantro, salsa, or toppings of your choice.
