Porcupine Meatballs

Ingredients
  

  • 1 lb ground beef
  • 1/2 cup rice
  • 1/2 cup bread crumbs of choice or crushed crackers
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • Small diced onion
  • Small diced bell pepper
  • 1 Tbsp Worcestershire sauce
  • 1 egg
  • Water
  • Ketchup to squirt on top of each porkie pine

Instructions
 

  • Mix together all ingredients together in a bowl
  • Preheat skillet on medium heat with some oil or butter
  • Form the meatballs to roughly baseball sized balls
  • Place the porcupine meatballs in the preheated skillet
  • Pour water in until it is half way up the meatballs
  • Squirt ketchup on top of each meatball
  • Cover and cook until the porcupine meatballs are cooked completely through. 30-40 minutes depending on size. Ensure internal temperature of 165°
  • Enjoy!

Optional: replace fresh onion and bell pepper with a seasoned dice frozen mix (roughly 2/3 C)
