(Mashed) Potato salad
- 5 lbs boiled or pressure cooked russet potatoes mashed can used preferred potatoes
- 1 cup mayonnaise a little more or less to taste
- ¼ cup yellow mustard a little more or less to taste
- 3 tbsp sweet pickle relish you can also use dill pickle relish or cut up pickles of choice.
- 5 hard boiled eggs chopped
- Half yellow onion finely diced
- Salt and pepper to taste
- Topped with a generous sprinkle of paprika.
Mix all the ingredients except the paprika very well. Add a little more or less to your taste and texture preference.
Top with paprika
Can be eaten immediately, best served the next day.
