- 1 Red Bell Pepper Sliced
- 1 Orange Bell Pepper Sliced
- 3 lbs Boneless Pork Loin Cooked and Shredded, Our recipe linked below
- 1 Cup Broth We use chicken, you can use any or even a light beer if you want.
- ¼ Cup Orange Juice
- ½ Cup Lime Juice
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Paprika
- ½ tsp Chili Powder
- 2 tsp Cumin
- ½ tsp Black Pepper
- 1 tsp Cayenne Pepper Optional
- 1 Small Onion Diced
- Tortillas We use Corn, but use your preference!
- Cilantro For Garnish
Take your Shredded Pork Loin and mix it with the broth, orange juice, lime juice, garlic powder, onion powder, paprika, chili powder, cumin, black pepper, and cayenne pepper in a bowl and allow the pork to marinate. At least 30 minutes. Up to over night. Sauté your bell peppers to desired doneness. We do about 10 minutes on medium heat so they have some charr but still also have a little crunch.
While the peppers are sautéing add the onions to your pork mixture.
Push you peppers to the side if you’re using a Blackstone (or griddle) like us. Otherwise pull them off the heat and heat up another skillet.
Add the pork mixture to your Blackstone (or skillet)
Let the pork cook 15-20 minutes stirring occasionally.
Once the pork is almost done go ahead a heat up your tortillas. We just move everything to one side and oil the Blackstone well so they don’t stick!
Plate up your tacos and enjoy! We top ours with Cilantro.
