Coconut Mint Sparkling Americano

Ingredients
  

Coconut Mint Syrup:

  • 1 Cup toasted Sweetened Coconut Flakes see notes
  • 1 Cup sugar
  • 1 Cup water
  • 4 Mint Sprigs OR 1/2 Tsp Mint Extract

Coconut Mint Sparkling Americano:

  • 2 Tbsp Coconut Mint Syrup
  • Shot of Espresso
  • Sparkling Water
  • Ice

Coconut Mint Syrup:

  • Put Coconut, sugar, and water into a sauce pan and heat until it's just about to boil. Remove from heat, if using fresh mint add it now, and cover. Allow to sit for ~15 minutes. Return to a medium heat, uncover and reduce until it reaches the desired thickness (~10 minutes) Remove from heat. If using extract add now and mix in. Strain and allow to cool without lid. Once cool it's ready to be sealed. Will keep in fridge for 2 weeks to 1 month. If you are using Extract instead of fresh add it at the very end or it will boil out, We don't recommend using both as it becomes over powering.

Coconut Mint Sparkling Americano:

  • Mix all ingredients and enjoy! We recommend adding your syrup and espresso to a glass to help dissolve the syrup then adding ice and topping with the sparkling water. Garnish with fresh mint if desired!

Notes

To toast Coconut you can either put it in your pan on a low-medium heat and stir frequently until toasted. Or put in a 325ºF oven for 4-10 minutes in a single layer. Keep an eye on it. It can burn quickly. Time varies based on your oven. I use a low convection oven and it takes about 5 minutes.
