Coconut Mint Spritzer

Ingredients
  

Coconut Mint Syrup:

  • 1 Cup toasted Sweetened Coconut Flakes
  • 1 Cup sugar
  • 1 Cup water
  • 4 Mint Sprigs OR 1/2 Tsp Mint Extract

Drink:

  • 1 – 2 Tbsp coconut Mint Syrup
  • 1 Cup Sparkling Water

Coconut Mint Syrup:

  • Method: Put all ingredients into a sauce pan and heat until it's just about to boil. Cover and remove from heat. Allow to sit for 15 minutes. Return to a medium heat and reduce until it reaches the desired thickness (~10 minutes). If you are using Mint Extract wait and add it after you reach your desired thickness and remove from heat.
  • To toast Coconut, you can either put it in your pan on a low-medium heat and stir frequently until toasted. Or put in a 325ºF oven for 4-10 minutes in a single layer. Keep an eye on it. It can burn quickly. Time varies based on your oven. I use a low convection oven and it takes about 5 minutes.

  • Method: Combine all ingredients and enjoy! Best served cold!
