Grilled Chicken and Balsamic Tomato Pasta

Ingredients
  

  • 4 chicken breasts large
  • ½ TBSP Salt
  • ½ TBSP Pepper
  • 1 TBSP Garlic powder
  • 1 TBSP Onion powder
  • 1 TBSP Paprika

Balsamic Tomato Sauce

  • 2-4 Roma tomatoes Diced
  • 1 TBSP Butter or Olive Oil
  • ¼ C Balsamic Vinegar
  • 4 Garlic Cloves Minced
  • 1 tsp Sugar
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 4 C Spaghetti or Pasta of choice Cooked

Instructions
 

  • Season the chicken with seasonings and put into a preheated grill that is set up for indirect grilling. Depending on heat of the grill and the thickness of chicken it will take about 30-45 minutes. Ensure the chicken reaches an internal temperature of 165° and juices run clear.
  • Melt butter over medium heat and sauté the garlic.
  • Once fragrant, add in the balsamic vinegar and reduce until thickened (roughly 5-8 minutes).
  • Stir in the diced tomatoes. Once tomatoes are coated, stir in sugar and Italian seasoning and onion powder and salt and pepper.
  • Plate cooked pasta, top with sliced grilled chicken, then spoon the balsamic tomato sauce over the top.
  • Enjoy!

Notes

This sauce is delicious, sometimes we double or even triple the sauce. 
We also enjoy the sauce over toasted garlic bread or french loaf slices.
