Grilled Chicken and Balsamic Tomato Pasta
Ingredients
- 4 chicken breasts large
- ½ TBSP Salt
- ½ TBSP Pepper
- 1 TBSP Garlic powder
- 1 TBSP Onion powder
- 1 TBSP Paprika
Balsamic Tomato Sauce
- 2-4 Roma tomatoes Diced
- 1 TBSP Butter or Olive Oil
- ¼ C Balsamic Vinegar
- 4 Garlic Cloves Minced
- 1 tsp Sugar
- 1 tsp Italian seasoning
- 1 tsp onion powder
- Salt and pepper to taste
- 4 C Spaghetti or Pasta of choice Cooked
Instructions
- Season the chicken with seasonings and put into a preheated grill that is set up for indirect grilling. Depending on heat of the grill and the thickness of chicken it will take about 30-45 minutes. Ensure the chicken reaches an internal temperature of 165° and juices run clear.
- Melt butter over medium heat and sauté the garlic.
- Once fragrant, add in the balsamic vinegar and reduce until thickened (roughly 5-8 minutes).
- Stir in the diced tomatoes. Once tomatoes are coated, stir in sugar and Italian seasoning and onion powder and salt and pepper.
- Plate cooked pasta, top with sliced grilled chicken, then spoon the balsamic tomato sauce over the top.

This sauce is delicious, sometimes we double or even triple the sauce.
We also enjoy the sauce over toasted garlic bread or french loaf slices.
