Grilled Chicken Kabobs
Marinade:
- Juice of 1 lime
- ¼ cup sweet bbq sauce (we use Sweet Baby Rays)
- ¼ cup pineapple juice we used 100% juice from can pineapple
- 1 tsp coconut amino’s sun soy sauce if not soy free
- ¼ tsp paprika
- 1 tsp garlic
- ⅓ tsp black pepper
Kabobs:
- Half onion in chunks
- 3 Colorful bell peppers or sweet peppers of choice in chunks
- Can of pineapple cut in chunks
- 2 chicken breast in 1 inch chunks
- 8 inch skewers
- Lime for fresh juice
Make marinade by mixing together all the ingredients and place in a cooking dish or ziplock bag that fits your skewers. We use a gallon bag.
Assemble you skewers by layers onion, pepper, pineapple, and chicken onto your skewers and place them in the marinade for 30 minutes to overnight.
On a preheated grill set up with coals on one half. Place the chicken over the coals and squeeze fresh lime juice over them, and rotate every 5 minutes. If they start to over caramelize, place on the side with no coals and put your lid on to finish the cooking.
