(Mashed) Potato salad

Ingredients
  

  • 5 lbs boiled or pressure cooked russet potatoes mashed can used preferred potatoes
  • 1 cup mayonnaise a little more or less to taste
  • ¼ cup yellow mustard a little more or less to taste
  • 3 tbsp sweet pickle relish you can also use dill pickle relish or cut up pickles of choice.
  • 5 hard boiled eggs chopped
  • Half yellow onion finely diced
  • Salt and pepper to taste
  • Topped with a generous sprinkle of paprika.

Instructions
 

  • Mix all the ingredients except the paprika very well. Add a little more or less to your taste and texture preference.
  • Top with paprika
  • Can be eaten immediately, best served the next day.
