Smoked Turkey Enchiladas
- 10 small flour tortillas
- 2 c turkey cooked, shredded
- 2 c shredded cheese we used fiesta blend
- 3 tbsp butter
- 3 tbsp flour
- 2 c turkey or chicken broth
- 1 c sour cream
- 4 oz diced green chilis
- 1 tsp Onion powder
- 1 tsp Garlic powder
- ½ tsp Pepper
Preheat oven to 350 degrees. Grease a 9×13 pan using non-stick cooking spray.
Mix cooked turkey and 1 cup of cheese together. Roll up in tortillas and place in pan seam side down.
In a medium saucepan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick.
Place the sour cream in a small bowl: temper it by slowly mixing in ¼ cup of the simmering sauce. Stir the mixture into the sauce in the pan.
Add in diced green chilis and seasonings.
Pour sauce over enchiladas and add remaining cheese over top. Bake in preheated oven for 20-25 minutes or until enchiladas are heated through and sauce is bubbly.
Top with cilantro, salsa, or toppings of your choice.
