Spatchcock Chicken

Ingredients
  

  • 1 Whole Chicken Thawed, if Frozen
  • 1 Stick of Butter Softened
  • tbsp Herbs de Providence
  • 1 tsp Paprika
  • 1 tsp Black Pepper
  • 2 tsp Salt
  • Orange or Apple Juice In Spray Bottle

Instructions
 

  • Cut out the backbone of the chicken and place cut side down.We recommend watching the episode for tips and tricks on how to do this.
  • Press down on breast bone so that the chicken lays flat.Use your thumbs to separate the skin from the meat.
  • Combine the softened butter and spices.
  • Taking small handfuls, Rub the compound butter between the skin and the meat until the whole chicken is coated. Use the last 2 tbsp of butter to coat the outside of the chicken.
  • Place on preheated smoker. Every 30-45 minutes spray with juice to keep the chicken moist.
  • Cook for 2 to 3 hours or about 20 minutes a lb. Ensure the chicken reaches an internal temperature of 165° in the thickest part of chicken and the juices run clear.
