Spatchcock Chicken
Ingredients
- 1 Whole Chicken Thawed, if Frozen
- 1 Stick of Butter Softened
- 1½ tbsp Herbs de Providence
- 1 tsp Paprika
- 1 tsp Black Pepper
- 2 tsp Salt
- Orange or Apple Juice In Spray Bottle
Instructions
- Cut out the backbone of the chicken and place cut side down.We recommend watching the episode for tips and tricks on how to do this.
- Press down on breast bone so that the chicken lays flat.Use your thumbs to separate the skin from the meat.
- Combine the softened butter and spices.
- Taking small handfuls, Rub the compound butter between the skin and the meat until the whole chicken is coated. Use the last 2 tbsp of butter to coat the outside of the chicken.
- Place on preheated smoker. Every 30-45 minutes spray with juice to keep the chicken moist.
- Cook for 2 to 3 hours or about 20 minutes a lb. Ensure the chicken reaches an internal temperature of 165° in the thickest part of chicken and the juices run clear.
